We use the iMX.257 and iMX.31 on many products. We run Window CE on all iMX devices and use Visual Studio as our IDE for these devices. Using Windows CE for these devices is the easiest way. It may not be the smallest code but Microsoft does most of the work for you.  If want to hand code for these devices then you will need the big Kiel compiler (over $6000) or Codewarior (also over 6 Gs). If you are down with Linux and have read your "mans" then using GCC and Eclipse could be a cheaper path. However if you are not a Linux Guru it will be very painful to jump into.
